Thanksgiving Dinner with BioLite

In preparation for the upcoming holiday weekend, we gathered close friends, packed the car, and headed to Great Mountain Forest in Connecticut to enjoy the last of the fall colors and cook an entire Thanksgiving meal on the BioLite BaseCamp and CampStove.

If you are heading out into the wilderness this Thanksgiving, or just want to impress your family by preparing your entire feast on a BioLite stove, follow these 5 simple recipes to create a complete Thanksgiving meal with all of the trimmings. All recipes have been BioLite tested and approved.

Turkey Drumsticks - Grilled on BioLite BaseCamp

 

For the main course, we decided to stick with the tried-and-true turkey bird. We grilled turkey legs for their moist meat and finger-food convenience.  Drumsticks take a little longer to cook all of the way through, which can be challenging for a hungry group of campers, but a quick canoe ride around the lake made the time fly by. However, we did arrive back to the campsite with one less drumstick and one happy dog. Rookie mistake.

Prep time: 8 minutes 

Cook time: 1 hour to 1 hour and 10 minutes
Ready in: about 1 hour and 18 minutes

What you will need

  • 1 Tbsp Cumin
  • 1 Tbsp Garlic Powder
  • 1 tsp Black Pepper
  • 1/2 tsp Cayenne Pepper
  • 1/2 tsp Sea Salt
  • 2 lb Turkey Leg, 2 drumsticks
  • 3 Tbsp E.V.O.O.
  • BioLite BaseCamp

Process

  1. Mix together cumin, garlic powder, cayenne, sea salt and pepper in a small bowl.
  2. Brush drumsticks with olive oil.
  3. Rub drumsticks with seasonings.
  4. Sear drumsticks on the grill for approximately 3 minutes per quarter turn.
  5. After searing all sides, move drumsticks to a part of the grill where they can cook by indirect heat.
  6. Cook drumsticks via indirect heat for an additional 50–60 minutes.
  7. The grill temperature during this time should read around 300°F.
  8. Turn drumsticks 1/4 turn every 10 minutes until they have reached an internal temperature of 180°F.
  9.  Let cool and eat!

    Scallion Sweet Potatoes – Cooked over the BioLite Portable Grill

    Sweet Potatoes were unanimously elected as the vegetable of choice to best compliment our drumsticks. Cut the potatoes in wedges and mix liberally with garlic to create a mouthwatering aroma. The mix of salty and sweet was a perfect combination. 

    Prep time: 10 min

    Cook time: 25 min

    Ready in: 35 min

    What you will need

    Process

    1. Peel and chop 1 ½ lbs of chopped peeled sweet potatoes.
    2. Cut the scallions into 2-inch pieces.
    3. Crush garlic cloves.
    4. Combine sweet potatoes, scallions, garlic cloves and thyme in a bowl.
    5. Drizzle with ¼ cup of olive oil.
    6. Season with salt and pepper and toss.
    7. Place on a sheet of foil and fold up.
    8. Grill over low heat until the potatoes are tender, 20 to 25 minutes.

    Cast Iron Stuffing - Made with the BioLite BaseCamp

    Stove Top Stuffing is the best part of any Thanksgiving feast. We doctored up a box of Stove Top Stuffing with fresh celery, dried cranberries, and bits of fresh parsley for added texture and flavor. It tasted just like mom made it.

    Prep time: 5 minutes

    Cook time: 10-12 minutes

    Ready in: 15-17 minutes

    What you will need

    • One box of Stove Top Stuffing
    • Fresh celery
    • Dried cranberries
    • Fresh parsley
    • Cast Iron skillet
    • BioLite BaseCamp

    Process

    1. Follow instructions on Stove Top Stuffing to prepare breadcrumbs.
    2. Chop celery into ¼ in. pieces.
    3. Chop fresh parsley.
    4. When breadcrumbs are finished cooking, add celery, cranberries and parsley.
    5. Mix ingredients and serve.

    Portable Apple Pie (aka Grilled Apples) – Fired over the BioLite CampStove

    For dessert, we left the pumpkin pie at home and grilled cinnamon apples instead. The combination of lemon and butter created a bit of a glaze that the cinnamon stuck to nicely. Be sure to keep an eye on the apples. They can quickly pass the point of grilled to overcooked if you don’t keep an eye on them.

    Prep time: 5 minutes

    Cook time: Until apples are brown on top

    What you will need

    Process

    1. Cut the apples in half.
    2. Spread butter evenly over exposed surface of each apple.
    3. Squeeze lemon juice on top of the butter.
    4. Sprinkle cinnamon on top of lemon juice.
    5. Place on BioLite Portable Grill Attachment face-down and grill.
    6. Remove apples with golden brown and serve.

    Hot Spiced Apple Cider

    Our beverage of choice was spiced apple cider with orange slices and cinnamon sticks.  We had enough left after the main course to kick things up a bit and add Captain Morgan’s Spiced Rum for a nightcap.  It was the perfect end to a perfect meal.

    What you will need

    • 1/2 gallon of Apple Cider
    • Ground cinnamon
    • Ground nutmeg
    • One orange
    • Cinnamon Sticks
    • Dried cranberries (optional)
    • BioLite KettlePot

    Process

    1. Pour ½ gallon of Apple Cider into the BioLite KettlePot.
    2. Add ¼ tsp cinnamon.
    3. Add ¼ tsp nutmeg.
    4. Add sliced orange, cinnamon sticks, and dried cranberries.
    5. Heat over CampStove for 8-10 min.
    6. Let cool slightly and serve.
